4-Ingredient Lazy, Silky, Vegan Mashed Potatoes

Life is all about simplicity, that’s why I decided to make these lazy as it can get mashed potatoes. This mash can be done all in the Instant Pot using the steam setting for 15 minutes depending on how many potatoes and cauliflower you are adding. Why the cauliflower you ask, well I find that it adds some nutritional value and also some bulk to the recipe. If cauliflower is not your jam simply omit it. Trust you are in for a fluffy, creamy and airy mashed potato treat.

Ingredients for Easy Mashed Potatoes

This particular recipe uses a Plant Based Butter alternative, in addition to your favorite Dairy Free Mozzarella Shreds. Now not to worry if you do not have an Instant Pot as these potatoes can be steamed or simmered on your stove. If you are using your stove I recommend you do not peel the potatoes until they are fully cooked. I particularly used Russet Potatoes.

What pairs well with Mashed Potatoes

Um literally anything. But I highly recommend you try this 4 Pound Vegan Shephard’s Pie that was rated one of the top 100 vegan recipes from the year 2020. That Shephard’s Pie is all veggies and no mock meats or beans so I highly recommend it. Or how about serving these mashed potatoes with this Kidney Bean Loaf as well and topping it off with your favorite vegan gravy. This recipe is made in its entirety in the Instant Pot but can also be adapted to a stove top. Make sure you read the full recipe before you begin.

Ingredients
  

Mashed Potatoes Main Ingredients

  • 8 Ounces Potatoes I used Russet
  • 4-8 Ounces Cauliflower
  • 2 Cups Water
  • 1 Package Vegan Mozzarella
  • 1 Stick Plant Based Butter

Optional Ingredients For Garnish

  • Chives
  • Additional Butter if desired
  • Salt and Pepper to taste

Instructions
 

  • If using the Instant Pot wash and peel potatoes, followed by washing the cauliflower. I know your heart just stopped because I peeled the potatoes but this is after all a lazy version of mashed potatoes. Add the water to the instant pot then place the steamer basked followed by the potatoes and cauliflower. If you do not desire a potent cauliflower flavor add only 4 ounces of cauliflower. Place the instant pot on steam for 10 minutes. If you are using a stovetop simmer the potatoes with the peel on them for 20 minutes. Add the cauliflower at the 20 minute mark and boil for 10 minutes or until fork tender. Cooking times will vary based on where you are located.
  • Once the potatoes are ready drain the water, add the entire bag of vegan mozzarella and the stick of butter.
  • Use an immersion blender or potato masher to make them silky and fluffy. I did this inside the instant pot so they could stay warm.
  • When you are ready to enjoy add the potato mixture to a serving dish, or not and garnish if desired with chives, additional butter and salt and pepper if desired.
