“Love is Love” Vegetable Platter

This colorful vegetable platter is ideal for meal prep for the week. With an array of vegetables and tofu you will think you are eating at a gourmet restaurant. You can mix and match different plant based proteins to any of these vegetables and make salads, sandwiches or pastas.

The trick to mix and match is having a good sauce for your meals. Not a sauce person? Season your vegetable freely with low sodium spices. I used Coriander and Achiote on the orange tofu because it gives it a smoky flavor.

After you wash and dry your vegetable cut them in small pieces and be sure to involve your children in the decorative process of this platter. There isn’t a certain recipe I used for this platter so the world is your vegan oyster so make this your own. Happy Eating.
